Cupcake Tower Worthy – Hummingbird Cake

It’s no secret I’m a lover of chocolate.  Preferably dark.  Mixed with peanut butter.  Mmmmm, okay focus Jennifer.  But when we hosted a Mother’s Day Brunch I couldn’t get out of my head this Hummingbird Coffee Cake I had just come across on Annie’s Eats.  No chocolate involved whatsoever but coconut, pineapple, banana…tropical deliciousness.

Drizzled with a cream cheese frosting and topped with some coconut and chopped walnuts this was the perfect choice for our brunch dessert and totally worth sacrificing my chocolate craving :)

I made mine a ‘gluten free’ version so my hubby could partake simply by substituting the two flours with Bob’s Red Mill Gluten Free All Purpose Flour.  I baked it a bit longer and wasn’t quite sure how the texture would be but it was delish.  It disappeared in a matter of minutes.

I’ve never put a bundt on The Cupcake Tower but I was so pleased to see how great it looked!  This would be an excellent choice for any event your hosting in brunch style, baby shower, bridal shower…birthday you name it.

Does anyone else feel some serious satisfaction and relief when they turn the bundt pan upside down and it actually WORKS?
