Gluten Free Birthday Cupcakes

I like to improvise in the kitchen.  I would like to say it’s because I’m just bursting with creativity but if I’m honest, it’s usually because I’m trying to make something ‘yum’ with what is in my pantry.  Taking three kids 4 and under to the grocery store is not all it’s cracked up to be (can I get an Amen?)  Sometimes my improv works out to be ingenius, sometimes, well we won’t talk about the other sometimes 🙂

For my Father In Laws birthday I volunteered to make the cupcakes for the party.  I often bring the dessert to parties because my husband is gluten intolerant and not everyone is comfortable with baking ‘GF’.  I was a little short on time (duh) and happened to have this Pamela’s gluten free cake mix on hand.


I made the cupcake recipe on the back but took some creative liberty by substituting coconut oil in the recipe (my new trendy baking ‘must do’) and tossing in some chocolate chips for good measure.


I enlisted my trusty baking assistant

and my very very serious taste tester.

While the cupcakes were in the oven we whipped up my favorite peanut butter cream cheese frosting (recipe at the bottom of this post) but this time added some decadence with dark cocoa powder.

Now these are not the ‘purdiest’ cupcakes but sometimes it’s just about how it tastes…and these did not disappoint.

They were delicious.
